Three Bean Mango Salad

A quick, easy and filling dish, whether you are a vegetarian or a guest at a summer party this will have everyone getting up for seconds.

Ingredients:

  • 1 can of kidney, black and red beans
  • 2 whole mangos cubed
  • Handful of fresh cilantro
  • Juice of 1/2 a lime
  • 3 corn on the cobs or frozen
  • 1 clove chopped garlic
  • 1 tablespoon raw honey
  • dash of salt/pepper
  • pinch of paprika
  • pinch of chili power

First you will place the corn in a boiling pot of water and put on low heat. While that cooks, strain all of the beans, rinse and place into a bowl. Next, add the mango, cilantro, garlic, honey, salt/pepper, paprika and chili powder and mix it all up (to taste.) The corn should be ready in 25 minutes and then you will cut the corn off of the cob and add to the bowl (if frozen just heat up and add to bowl.) Lastly, add the lime juice. Mix it all up and place into the refrigerator over night or for a few hours. Ready to eat!
