Dijon Mustard Prime Rib and Roasted Potatoes

This recipe is heaven in your mouth. You will love every bite.

Ingredients:

Prime Rib (we have 10 lb. worth usually for holidays)

3lbs. Mini rustic potatoes

1-2 tablespoons Dijon Mustard

 Salt/pepper/oregano/rosemary to taste

½ cup extra virgin olive oil

4 chopped shallots

2 cloves chopped garlic

Pre heat oven to 500 degrees. Place the prime rib in a deep cooking pan propped up, where it will allow the potatoes to fill up the space around it. First, clean and cut the rustic potatoes in halves and add to bowl. Add the salt/pepper/oregano/thyme/rosemary in the bowl with extra virgin olive oil, chopped garlic and chopped shallots and mix up. Leave that in the bowl while you dress the prime rib, rub Dijon mustard onto meat. Then add salt/pepper/oregano/rosemary/thyme over it. Place the potatoes around the prime rib and place into oven. Cook prime rib 10-15 minutes at 500 degrees to crisp up and then turn it down to 350 degrees for 11-12 minutes per lb. for rare and 13-15 minutes per lb. for medium rare.
