Roasted Veggies

Got to have your greens! Simple and delicious side dishes to nourish your body, with some holiday flavor.

Ingredients:

1 bundle Broccoli Rabe

1 pack of String Beans

2 handfuls Baby Bella Mushrooms

2 cloves garlic chopped

Pink Himalayan salt/pepper to taste

Handful chopped parsley

Mini bundle of basil

Spray Extra Virgin Olive Oil

First wash all the veggies and place the broccoli rabe in a pot of boiling water. That will cook for about 22 minutes and then strain. Pre heat oven to 400 degrees. In the meantime place the string beans in a bowl, spray a little olive oil, a little garlic, basil, and a dash of salt/pepper, mix up and place on sheet pan. Place mushrooms in a separate bowl with olive oil, garlic, salt/pepper and parsley, mix up and place on sheet pan, get right into the oven. Cook for about 25-30 minutes. After straining broccoli rabe, in same pot place the rest of the olive oil and garlic, sauté quickly and then add broccoli rabe, sprinkle salt and cook for another 5 minutes. Once all of the veggies are cooked, place on a nice dish and bam ready to eat!
