Sausage, Chicken and Potato Pot Luck

Talk about the ultimate one pot meal, savory flavors that can cater to anyones appetite.

Ingredients:

1 lb.Chicken cutlets

5 lbs. Idaho potatoes

1 chopped white onion

Salt/pepper

1 clove chopped garlic

1/2 teaspoon paprika

1/2 teaspoon chili powder

handful of chopped cilantro

1 whole lime (lime juice)

1/2 cup extra virgin olive oil

First, preheat the oven to 375 degrees. Rinse the chicken cutlets off and dry them, place them into a separate bowl. We are going to make the marinade for the chicken; take the cilantro, garlic, lime juice, olive oil, chili powder, paprika and the salt/pepper. Mix that up with the chicken and put to the side to let it sit.

While the chicken sits place the sausage and chopped onion into a big tin. Next, wash the potatoes and you can either peal them or leave the skin on and cut into quarters. Place them into the tin with the sausage and onions, sprinkle a dash of salt/ pepper and a drizzle of olive oil and mix it up. Lastly, place the chicken into the tin, mix it up and toss it into the oven.

Let that cook for about 50-55 minutes at 375-400 degrees and enjoy!
