We are big pasta fans and always experimenting with different recipes. Our sausage, collard green and cannelloni bean pasta hits the spot.
Ingredients:
Bundle of collard greens
Salt/pepper
1 can of cannelloni beans
1 clove chopped garlic
Pasta (optional)
Pork sausage
1/2 cup extra virgin olive oil
Parmesan cheese
First, place two pot’s filled with water on high heat to boil, also preheat the oven to 400 degrees. Place the sausage on a sheet pan and cook that in the oven for about 25 minutes or even on the grill. While that cooks, we are going to wash the collard greens and cut the stems off, once the water is boiled place the greens in there to cook. That will be about 10-12 minutes and then strain it. Then take that same pot and drizzle olive oil on the bottom of the pot, add the chopped garlic and sauté that just before it turns golden brown. Strain the beans and place into the pot, add a dash of salt/ pepper, mix and place on low heat. Once the beans are cooked, place the collard greens in the same pot and mix lightly. The sausage will still be cooking, so add the pasta to the boiling water, doesn’t matter what kind, you can even use rice. That will cook for about 8 minutes depending on the type of pasta. Strain that and add the pasta to the collard greens and bean mix. Once the sausage is done cut it up into quarter pieces, add to the pasta and mix up. Finish it off with a sprinkle of parmesan cheese and time to eat!
