Summer Salad

This delicious side dish at a bbq or even the beach will keep you refreshed and satiated.

Ingredients:

  • Fresh Basil handful
  • 1/4 cup extra virgin olive oil
  • 1 clove chopped garlic
  • salt/pepper to taste
  • 1 cucumber cut into 1/4
  • medley tomatoes cut into 1/2
  • rainbow carrots peeled and cut into 1/4

First, clean and cut up the cucumbers, tomatoes and carrots, throw them into a bowl. Then drizzle the olive oil, dash of salt/pepper, basil and mix it up. You can place it into the refrigerator for a few minutes if you want it cool. Ready to go in five minutes! Enjoy=]
